Salads are a perfect way to step up your veggie intake. They make a quick and nutritious lunch and can be prepared with a variety of ingredients.
Cherry season is short and sweet and inspired this simple salad. I got Rainer and sweet cherries on sale this week. Adding fruit to leafy greens is an easy way to add flavor and bulk.
I made this as a single serving salad, so I’m not going to list exact measurements of ingredients. Just add the desired amounts that suit your taste. Make one small salad or a large one to feed a group.
Cherry & Arugula Salad-
- Sweet cherries
- Rainier cherries
- Feta cheese crumbles
- Red onion, sliced
- Glazed walnuts
I like to use Balsamic vinaigrette dressing on this salad. Add the ingredients to a serving bowl and give a light toss and it’s ready to serve.
The different colored cherries are really beautiful and pair perfectly with the peppery arugula. What is your favorite summer salad?
