Summer and peaches go hand in hand. This summer fruit is delicious in pie or cobbler and equally wonderful in salsa. I had an abundance of peaches and decided I wanted to incorporate them into a savory dish.
I made this simple salsa to top chicken breasts. The juicy peaches and tangy tomatoes added so much flavor to my old stand by chicken. If you want to serve as an appetizer with chips, it’s awesome too.
You can get almost all your ingredients at your local farmers market too. I’m also, an Aldi fan and they had super cheap peaches this week. Wherever you gather your ingredients, this dish will disappear with a quickness.
Peach Salsa- (I threw this together based on what I had on hand and flavored to my liking.)
- 3 ripe peaches, diced
- 2 Roma tomatoes, diced
- 1/3 onion, diced
- 1/3 orange pepper, diced
- 1 jalapeño, diced
- A few squeezes from a lime or lemon.
- Fresh cilantro to taste
- Salt and pepper to taste
1. Chop all your veggies and peaches into a small dice and place in a bowl.
2. Squeeze citrus (be sure to not get seeds in the bowl) into salsa mix and season with salt and pepper to taste. Stir.
3. Chop fresh cilantro and add desired amount to salsa. Give a quick stir and serve immediately.
*Cover and place in fridge for 1-2 days if you have leftovers.
