Fruit Salad

Late Spring and Summer are wonderful because so many produce are available fresh and ready. I like eating fruit salad because it’s ready made to consume over a couple days. It’s also versatile that you can use any fruit you have on hand.

My kids like to eat it, which makes it a perfect addition to lunchtime. They like a dollop of whipped cream on top. Feel free to use Cool Whip if that’s your thing.

Sometimes, for breakfast I like to prepare a simple parfait. You can use your fruit salad mix, yogurt and granola-layer for a tasty morning treat.

Simple Fruit Salad-

Ingredients:

  • 1 Granny Smith apple
  • 1 Banana
  • 1 can mandarin oranges (drained)
  • 1/2 pint strawberries
  • Juice from half a lemon

Directions:

1. Chop up the apples, strawberries and banana and add to bowl. Dump oranges on top. Give a quick, but gentle toss.

3. Squeeze lemon juice over top fruit to prevent browning. Stir again and serve up with yogurt or whipped cream.

This makes a wonderful afternoon or evening snack too. The evenings are the hardest time for me to stay away from my pantry. This is a guiltless snack.
