When you have a fridge full of lemons and dreary rainy days in May, you make lemonade! The sparkling variety, for just a little extra pizazz. I love carbonated beverages, even if they aren’t the most healthy option. This drink tastes just like the cans of “Lemon Lemon”, a delightful sparking beverage, I get on occasion at our local Battlefield Country Store.
This drink is a great porch sipper on a quiet evening and also terrific when you are grilling out or on a picnic. Refreshing, sweet and a hint of tartness; all the bases are covered here.
Sparkling Lemonade (Recipe from Taste of Home)
3/4 cup sugar
1/2 cup water
1/4 cup lemon peel strips (about 1 lemon)
3/4 cup lemon juice (about 3 lemons)
1 cup club soda, chilled
1. In a small saucepan, heat sugar and water over medium heat until sugar is dissolved, stirring frequently. Stir in lemon strips. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Cool slightly. Discard lemon peel.
2. Transfer to a pitcher. Stir in lemon juice; cover and refrigerate until chilled. Stir in club soda. Serve over ice.
*Feel free to double this recipe as it makes about two and a half cups as written above.
Load a glass with ice and pour yourself a nice glass of lemonade and let your worries drift away.
